How to Make Vegan Overnight Oats
Vegan Overnight Oats – A blissful, no-cook, make-ahead breakfast that will be ready for you when you wake up in the morning. The combination of oats, blueberries, raspberries, maple syrup, almond milk and mixed seeds is simple and very healthy. Vegan and gluten-free.
Ingredients you need
- 1 cup rolled oats
- 1 cup almond milk, unsweetened
- 1/2 teaspoon vanilla extract, optional
- 2 tablespoons fresh blueberries
- 2 tablespoons fresh raspberries
- 2 teaspoons maple syrup
- 1 tablespoon chopped almonds
- 1 tablespoon mixed seeds (we used flax, chia, and hemp)
Directions
1. Combine all ingredients in an airtight container and mix well. Cover, and refrigerate overnight.2. Serve cold with additional berries, almonds and mixed seeds and a good drizzle of maple syrup. Enjoy!
Notes:
- Use less almond milk if you want thicker oatmeal, more if you like it runny.
- Use any other liquid you like: soy milk, hazelnut milk, water, orange juice.
- You can use dried fruit such as raisin or dried cranberries instead of berries.
- These overnight oats can be stored refrigerated for up to one week in a airtight container.
