How to Make Pepper Chicken Bake


Pepper Chicken Bake – An incredibly easy chicken dinner packed with super fresh flavors. This delicious chicken bake with bell peppers is so quick and easy to make with easy-to-find ingredients: Simply toss diced chicken with onion and bell peppers and drizzle umami-style sauce before popping in the oven for 25 minutes. Dinner is ready in less than 30 minutes. Enjoy!

Ingredients you need


  •     2 lbs chicken breast, boneless and skinless
  •     1 green bell pepper, sliced thin
  •     1 red bell pepper, sliced thin
  •     1/2 onion, finely diced
  •     1/2 cup low-sodium chicken stock
  •     3 tablespoons soy sauce
  •     1/4 teaspoon ground ginger
  •     1/4 teaspoon garlic powder
  •     1/4 teaspoon black pepper
  •     2 tablespoons unsalted butter, diced
  •     Lemon slices and fresh chopped parsley or basil, for garnish


Directions

1. To make the peppers chicken bake: Preheat your oven to 400˚F (200ºC). Chop chicken breasts into small pieces. In a small bowl or mason jar, combine chicken stock, soy sauce, ginger, garlic powder, and black pepper.

2. Arrange the chicken pieces flat in a large baking dish and season with cracked black pepper. Give a quick stir to combine chicken with seasoning. Top with diced onion, then over chicken pieces with the sliced peppers. Sprinkle a little garlic powder on top.

3. Pour the sauce mixture over the chicken and peppers and give all a good stir, to combine the sauce evenly. Arrange diced butter on top on the chicken and peppers.

4. Bake the pepper chicken casserole on the middle rack for 25  – 30 minutes or until chicken is cooked through and no longer pink (internal temperature of 165˚F – 74ºC). Garnish the pepper chicken bake with lemon slices, fresh cilantro, and serve hot with your favorite side dish – like cauliflower rice, rice, bulgur or pasta. Enjoy!
