Healthy Chocolate Peanut Butter Oatmeal Breakfast


Healthy Chocolate Peanut Butter Oatmeal – An amazing, healthy breakfast full of protein and fiber! This chocolate peanut butter oatmeal is made with only 6 ingredients and takes 5 minutes of prep. With gluten-free oats, peanut butter, coconut milk, vegan chocolate chips, and sweetened with maple syrup, you can wake up to a delicious breakfast in a bowl!

Ingredients you need

    3/4 cup quick oats
    1 cup plain almond milk
    1/2 cup coconut milk
    1 tablespoon smooth peanut butter + for garnish
    Few drops vanilla extract, optional
    Garnish: fresh raspberries, vegan chocolate chips, maple syrup

Directions

1. To make the chocolate peanut butter oatmeal: Combine the 1-minute oats, plain almond milk, and coconut milk, in a saucepan over high heat. Cook, stirring occasionally until the mixture comes to a simmer. Add in the peanut butter, and vanilla extract, stirring to combine.

2. Cook for half a minute, until the oatmeal comes to your desired consistency, then remove from heat. If your oatmeal is too thick, add a splash of almond milk or coconut milk and mix well to combine.

3. Transfer the oatmeal to a serving bowl. Top the chocolate peanut butter oatmeal with a spoonful of peanut butter, raspberries, and chocolate chips, and a good drizzle of maple syrup, if you like. Enjoy!
